TMI gala to have Cuban flair

The annual gala of TMI – The Episcopal School of Texas will have a tropical flair. Stars 2017: Havana Nights will feature a menu inspired by Cuban cuisine, prepared by Rosemary’s Catering. 
At a Feb. 28 tasting in Sunset Station, Yvette Lashway, Stars co-chair with Stephanie Fincke, TMI Director of Special Events Darcy Scrimpshire and others sampled a menu that included picadillo empanadas with cilantro crema and avocado and mango cones as appetizers and “Ropa Vieja” braised beef short ribs paired with garlic-sautéed jumbo shrimp as the entrée. Cuban chopped salad, yam hash with caramelized onions and a dessert of Warm Key Lime “Pie” (white chocolate cake with key lime gelato) round out the menu for the sit-down dinner.

The event also will feature cocktails, including a mojito bar, a cigar roller, silent and live auctions and dancing to live music.

Stars Over TMI, the school's premier fundraiser, is an annual event attended by over 400 parents, alumni, and community and business leaders. All proceeds from this event support academic programs, teacher training, technology, facilities improvements, student financial aid and other school programs.
